Prior to his installation in Mexico, Guillaume DEMAY

has worked with pastrycooks chiefs of reputation.

He indeed collaborated during more than 2 years with

Chef  Philippe ANDRIEU, within the famous restaurant

LADURÉE in Paris.

Then he spent 2 years within the de luxe Hotel CRILLON,

always in Paris, beside Chef Christophe FELDER.
